[Makes 10 cookies]
Ingredients
1 cup/90g oat flour
2 tbsp/80g almond butter
4 tbsp pure maple syrup
1/3 tsp baking soda
1 tbsp ground flaxseeds
4 tbsp plant milk
Optional: seeds, cacao nibs, chopped nuts, shredded coconut, dark chocolate
Method
Preheat the oven to 180 degrees Celsius.
Whisk the oat flour, baking soda and flaxseeds together in a bowl.
Add in the almond butter, maple syrup and plant milk. Stir well to combine.
Using a teaspoon, place spoonfuls of the mixture onto a lined baking tray. You should have about 10 cookies.
Flatten each spoonful to create a circular shape and top with any optional extras.
Bake for 12-15 minutes until golden brown.
